
Cherry liqueur is a sweetened liqueur flavored with macerated or infused cherries.
Another cherry liqueur, such as Cherry Heering, swaps in one for one. Kirsch brings cherry flavor but no sugar and more strength. Use about three-quarters of the measure and add syrup a barspoon at a time, tasting as you go. Maraschino is clear and tastes more of almond than of fruit, so the drink turns lighter in color and nuttier.
Kirsch (cherry eau-de-vie)
Colorless and unsweetened, usually 40% or more.
Distilled from Marasca cherries and their pits, then sweetened.
Cherry liqueurs made by maceration on a brandy base hold up considerably better than the neutral-base ones, so the label is worth reading. Either way, keep it out of the light: the red is the first thing to fade.
