
Orange juice is the unfermented juice expressed from mature sweet oranges of the species Citrus sinensis.
Round and pulpy on the palate with a soft, slightly viscous body, finishing on moderate acidity behind a medium sweetness and a pronounced fresh sweet-orange aroma.
Shaken into the build so the pulp aerates and integrates, it works as a juice component supplying sweetness, body and aroma together; the fresh, pasteurized and from-concentrate forms differ measurably in balance, so freshness at the point of use changes what it contributes.
Poorly substitutable when the sweet-orange character is the point, since that aroma is specific to Citrus sinensis; its sweetness and acidity can be approximated with a sweetener plus another citrus juice, but the aroma cannot be reconstructed and mandarin juice is a different species.
Mandarin/tangerine juice
Orange juice is defined as the juice of the sweet orange, Citrus sinensis, whereas mandarin or tangerine juice comes from Citrus reticulata, a distinct species specifically excluded from the orange juice standard. The two differ in sugar-to-acid balance and aroma despite both being sold casually as 'orange'.
Under the US FDA standard of identity, it is the juice of mature Citrus sinensis oranges, excluding Citrus reticulata (mandarin) apart from a small hybrid allowance. It is sold fresh and unprocessed, pasteurized, or reconstituted from frozen concentrate, and carries suspended pulp that settles on standing.
Freshly squeezed juice oxidizes within hours to a day, losing aroma and developing off-flavours; refrigerate and use soon after squeezing.
