Cocktails with White rum
White rum is a light, mild rum from molasses, filtered clear, made as a clean, easy base. This is the Spanish-Caribbean "ron ligero" style: not bold, but not truly neutral either, keeping a soft cane character under the lightness.
ABV37.5–40%37.5% is the EU minimum, US bottlings 40%. A Daiquiri is a double-citrus shake with heavy dilution, and 37.5% thins out in it much as 40% does in an Old Fashioned, so reach for 40% when you shake.
Substitutes for White rum
Anything with oak behind it tints a clear drink and softens it — that is the trade, and the strength barely moves. Overproof bottles are a different tool altogether, made to be heard rather than to disappear.
