Pre-chill a glass
Dry shake (without ice) all ingredients: London dry gin 45 mlRaspberry syrup 15 mlLemon juice 15 mlEgg white 5 ml
Shake again with ice
Fine strain into the chilled cocktail glass
Garnish with raspberries

Tips

Shake everything without ice for about 15 seconds so the egg white whips up, then add ice and shake again.
Squeeze the lemon fresh; its sharpness is what keeps the raspberry syrup from making the drink too sweet.

History

The Clover Club – IBA is the Clover Club as the International Bartenders Association lists it among its "Unforgettables": gin, lemon juice, raspberry syrup and egg white. The Clover Club is a pre-Prohibition cocktail named for a Philadelphia gentlemen's club chartered in 1882, though who invented it, and when, is undocumented. The earliest known recipe came in 1901 from Michael Killackey, head bartender at New York's Waldorf-Astoria.
