
Single cream and half-and-half are pourable, non-whipping cow's-milk creams in the lower milk-fat range, used to enrich and lighten rather than to whip.
Mild and faintly sweet with a clean dairy note, carrying a light, silky body well short of the thick richness of heavier creams.
Poured to enrich and opacify a drink, it lends pourable body and a pale, lightening colour when shaken or built in; its lower fat means it will not whip and can curdle or separate against acidic ingredients such as citrus or wine, or under hard heat, more readily than high-fat cream.
Any dairy cream in a comparable fat range reproduces the pourable body and pale, opacifying effect; the mid-fat pouring consistency can also be approached by thinning a higher-fat cream or enriching milk. It cannot replace a whipped or stiff, high-fat cream where a firm body is needed.
Single cream and half-and-half sit in the lower milk-fat range and lack the fat to whip stably; double and heavy cream carry substantially more milk fat and whip to a firm body.
US half-and-half vs UK single cream
US half-and-half is a milk-and-cream blend at 10.5–18% milkfat; UK single cream is a separated cream at roughly 18% minimum, making it richer, so US light cream (18–30%) is a closer analogue than half-and-half.
These creams share a name across markets but are regulated separately: US half-and-half is a mixture of milk and cream between 10.5 and 18 percent milkfat, pasteurized and often homogenized, while UK single cream is a milk-fat fraction separated from cows' milk at a higher defined minimum. Both sit below the higher-fat creams, distinguished chiefly by that lower milk-fat percentage; US light cream (18–30%) is a closer analogue to UK single cream than half-and-half is.
A fresh, low-acid dairy product that spoils rather than merely fading; keep refrigerated and use before its date.
