This lighter Caipirinha muddles fresh lime and cachaça with a sugar-free sweetener and chilled water instead of granulated sugar. Tart lime hits first, cachaça's grassy funk follows, and the sugar-free sweetener leaves a clean, light finish without any syrupy heaviness.

Instructions for 1 serving

  1. Pre-chill a glass
  2. Cut half a Fresh lime into wedges and drop into a sturdy rocks glass
  3. Add Sugar-free sweetener syrup 15 ml and muddle
  4. If using cubed ice straight from the freezer, add Chilled water 20 ml and muddle again (omit water if using watery ice)
  5. Once the juice is extracted, transfer the mixture to the serving glass
  6. Pour Cachaça 45 ml into the muddling glass, swirl to rinse, and pour into the serving glass
  7. Stir to combine
  8. Crack 4-5 large ice cubes and drop into the serving glass
  9. Stir, top with more ice, and serve with a stirrer

Tips

  • After muddling, add the cachaça and crack four or five large cubes over it as the card does, then give one short stir before serving with the stirrer.
  • Muddle just 8-10 times with firm downward pressure to extract juice and oils, over-muddling pulls bitterness from the pith into the drink.
  • Add the sugar-free syrup before muddling the lime so the crystals or liquid help pull juice out and dissolve evenly with the fruit.
  • Build the chilled water and cachaça over crushed or small cubed ice after muddling, then give one short stir to bind flavors before adding the stirrer garnish.

History

The Caipirinha is Brazil's national cocktail, made with cachaca, lime, and sugar, and its exact origin is disputed among several accounts. One version holds that it was invented by landowning farmers in the Piracicaba region of Sao Paulo state during the 19th century as a drink for high-society parties tied to the region's sugarcane culture. A widely repeated rival account instead dates it to around 1918, describing it as a home remedy of lime, garlic, honey, and cachaca used against the Spanish flu, in some tellings originating in the Alentejo region of Portugal rather than Brazil. Cocktail historian David Wondrich has noted that the drink circulated under the name "Batida Paulista" in Sao Paulo before its popularity spread nationally in the early 20th century and was recorded in travel accounts by the 1940s, later becoming known internationally by the late 1970s and early 1980s. The name derives from "caipira," a term for a person from the Brazilian countryside, reflecting the drink's rural origins. Brazil officially recognized the Caipirinha as a national cultural heritage drink in 2003. This low-calorie version follows the same lineage but substitutes a sugar-free sweetener syrup and chilled water for the traditional muddled sugar, reducing the drink's calorie content while keeping the cachaca-and-lime base intact.
