
Bénédictine D.O.M. is a French brandy-based herbal liqueur made from a secret blend of 27 herbs, roots, flowers and spices, sweetened with honey.
B&B, which is Bénédictine blended with brandy, swaps in one for one and makes the drink a little drier. Yellow Chartreuse is the usual bar substitute, one for one. It is also herbal and honeyed, a bit stronger and with a different set of herbs, so taste for sweetness. Drambuie, one for one, covers the honey side but adds Scotch: at home in a whisky drink, too much for a light one.

Sugar preserves as surely as alcohol, so an opened bottle keeps for years and what it loses is aroma, quietly. In the cold, sugar can crystallize at the bottom: gentle warmth and a shake put it back into solution. Keep it out of direct sun, which takes the color and the scent together.
